Second serving
Second serving refers to the act of offering a further portion of a dish kept warm, once the first plating has been eaten, without the guest having to ask. The waiter watches the table, holds the garnish at temperature and returns with the platter to replenish the plates. A mark of attention in generous houses, this gesture, inherited from French service, prolongs the enjoyment of a favoured dish while caring for its presentation.
