Spanish tortilla


Thick Spanish omelette of potatoes confited in olive oil and bound with eggs, sometimes with onion. Cooked in a pan then flipped to brown both sides, it is served warm or cold, in wedges, as a tapa or a dish. Distinct from the Mexican corn tortilla, it is a popular classic reinterpreted in the Spanish gastronomy of palace hotels.
