Spun sugar


Spun sugar refers to fine threads of sugar produced by flicking cooked sugar over a support with a cut whisk or fork. Cooling instantly, these threads form an airy, glossy mass, golden or colourless depending on the degree of cooking. It decorates croquembouches, entremets and plated desserts. Fragile and sensitive to humidity, spun sugar is prepared shortly before service to preserve its shine and lightness, as ambient moisture quickly softens and collapses the delicate strands.
