Stable cellar temperature
Stable cellar temperature is the primary condition for good long-term wine conservation. The ideal sits around twelve to fourteen degrees Celsius, held constant throughout the year. Sharp swings expand and contract the wine, stress the cork and accelerate ageing. A cellar kept at a steady temperature, even slightly above the optimum, is preferable to one that oscillates between extremes across the seasons, since consistency protects the wine most.
