Sur lie ageing


Sur lie ageing leaves the wine to rest in contact with the dead yeast cells left after fermentation, known as lees. This practice enriches the wine with aromatic compounds, adds body and a rounder texture, and shields it from oxidation. Muscadet from the Loire Valley draws its identity from it, remaining on its lees for at least one winter. White Burgundy also uses the method routinely.
