Tableside salad preparation refers to the act of seasoning and tossing a salad at the guéridon, before the guest, often for a Caesar or delicate leaves. The waiter builds the dressing, folds in the ingredients in the intended order and coats each leaf without bruising it. Still common in luxury hotels, this gesture personalises the balance of the seasoning and turns a simple starter into a demonstration of precision.
