Tableside saucing
Tableside saucing refers to the act of pouring a sauce over an already plated dish, before the guest, at the final instant of service. The waiter tilts the sauce boat or spoon to trace an even thread, measures according to the dish and avoids splashing the rim of the plate. Common in gastronomic tables, this gesture preserves the texture of the sauce, releases its aroma and completes the presentation under the client's gaze.
