Tableside sole filleting refers to the act of lifting the four fillets from a whole cooked sole, performed at the guéridon before the guest using a spoon and fork. The waiter removes the skin, separates the flesh from the central bone, then reassembles the fish on the plate. This precise gesture, inherited from the guéridon service of grand houses, requires a thorough knowledge of the fish's anatomy.
