Tom yum


Hot and sour Thai soup from the centre of the country, whose name describes the cooking (tom) and the sour, spicy seasoning (yam). The fragrant broth combines lemongrass, galangal, kaffir lime leaves, chilli, lime juice and fish sauce, often with prawns (tom yum goong). Bright and aromatic, it illustrates the Thai balance of sourness, heat and umami in the refined cuisine of palace hotels.
