Topping up
Topping up fills the empty space created in a barrel by the natural evaporation of wine, regularly refilling it with the same wine. This practice limits contact with air and prevents excessive oxidation during ageing. It is essential for most wines but deliberately abandoned for certain oxidative styles. The vin jaune of the Jura is never topped up, allowing a protective yeast veil to form on the surface.
