Wine aeration


Aeration refers to the controlled exposure of a wine to atmospheric oxygen in order to open its bouquet and soften its structure. It is achieved through decanting, swirling in the glass or simply a few minutes of contact with the air. On a young red it eases tannins, while on a very old wine excessive contact can instead dull the aromas. The sommelier adjusts the duration according to the wine's age and power.
