Wine markup coefficient
A wine markup coefficient expresses the ratio between the purchase price of a wine and its selling price on a restaurant list. Long set around three times the buying cost, it tends to shrink on prestigious bottles in favour of a fixed cash margin deemed fairer. Mastering it governs the economic balance of the cellar and the way guests perceive value for money on the wine offer.
