A simplified variant of the traditional kimoto method, which omits the laborious manual mashing of the starter while still allowing lactic acid to develop naturally over time. Yamahai yields deep, tangy and complex sakes with an assertive character. Appreciated for its aromatic richness, it offers bold pairings with full-flavoured dishes on gastronomic lists.
