Palace gastronomy forms a distinct category within the starred universe. The Michelin Guide France 2024 listed 30 three-star restaurants, a significant share of which is housed in a Parisian, Monaco or coastal palace (Michelin Guide France, 2024). The Michelin Guide UK and Ireland 2024 named seven three-star tables in London and England (Michelin Guide UK, 2024). The Michelin Guide Italy 2024 confirmed fourteen three-star houses across the country (Michelin Guide Italia, 2024). This ranking isolates chefs in permanent residence at an ultra-luxury hotel house, based on the Michelin distinctions published between 2024 and 2026, the Robb Report Best Chefs 2026 list, the Bloomberg Pursuits Chef of the Year 2025 selection and the Eater Best Hotel Restaurants 2026 ranking. Three criteria structure the selection. First criterion, verifiable Michelin stacking on the chef's principal hotel table. Second criterion, the duration of the residency and consistency with the hotel brand. Third criterion, the culinary signature recognized by the guides and the international press. Star statuses cited correspond to the official rankings available as of June 1, 2026.
Conclusion
When I built this ranking, I wanted to avoid the trap of the affective list. Thirty chefs figure here because their hotel table appears in the official Michelin rankings published between 2024 and 2026, or because their documented closure marks a structuring shift in contemporary luxury hospitality. What struck me during the exercise is the Parisian density on Tier 1, five tables out of ten, and the way London has recomposed its repertoire between 2021 and 2025 with the openings of The Peninsula, Raffles at The OWO and the closure of Marcus at The Berkeley. The Davies and Brook then Claridge's Restaurant sequence also testifies to an evolution of the chef-palace contract that the coming years will continue to redraw. Lorenzo Eeman.
